Once you have harvested herbs, you may want to dry some to preserve them for future use.  The best drying conditions is air drying inside, in a dark cool room.  Do not air dry in the sun.  You can lay them on a screen or shelf or you can hang them in bunches. 

Another way you can dry herbs is in a dehydrator.  If it has a setting where you can turn all heat off, do that.  If you cannot turn the heat off, do not ever dry herbs above 110 degrees Fahrenheit.  Even lower heat if possible.  When you dry with heat over 110 degrees, you kill the medicinal benefits.

No matter which method you prefer, store the herbs after drying in glass jars with tight-fitting lids in cool, dark areas.  If stored properly, dried herbs will retain their medicinal qualities for at least one year.  It is best to not grind the herbs into a powder until immediately before you use them.
